HAPPY CINCO De Mayo!! Cinco de Mayo remembers a Mexican battle win in 1862 and is now mostly celebrated in the US & Canada with parties, music, and food to honor Mexican culture, though some say it causes confusion with independence Day Sept 16.
Cinco means PICO! My favorite recipe, I make for my family ever 2 or 3 months is PICO DE GALLO. Just love this stuff! It’s tomatoes, onions and cilantro, and perfect on EVERYTHING!
🌶️ Tyler’s West Coast Classic Pico de Gallo Recipe
Ingredients:
- 4 ripe Roma tomatoes, diced
- 1 small white onion, finely chopped
- 1–2 jalapeño peppers, seeded and finely chopped (keep seeds for more heat)
- 1/2 cup fresh cilantro, chopped
- Juice of 1 lime (about 2 tbsp)
- Salt to taste (about 1/2 tsp to start)
Instructions:
- Combine tomatoes, onion, jalapeños, and cilantro in a bowl.
- Add lime juice and salt; stir to combine.
- Taste and adjust salt, lime, or heat.
- Let sit for 10–15 minutes for flavors to blend.
Tips:
- Use fresh, firm tomatoes for the best texture.
- Chill for 30 minutes if making ahead, but serve same-day for best flavor.
