🥪 Japanese Egg Sandwich (Tamago Sando)
Ingredients (makes ~2 sandwiches)
4 large eggs
~3–4 tbsp Japanese mayonnaise (Kewpie) — the secret richest flavor
1–2 tsp of cream
A pinch of sugar or honey (tiny bit adds that classic sweet hint)
Salt & white pepper, to taste
4 slices soft white bread / shokupan (Japanese milk bread/Kuipers White Sandwich) — best if crusts are cut off
Softened butter (optional, spread on bread)
Steps
-Hard‑boil the eggs
-Place eggs in cold water, bring to a boil 9–10 min, cool and peel.
Make the egg salad
Chop or mash egg whites.
Mash yolks and mix with Kewpie mayo, a bit of cream, sugar, salt, and white pepper until smooth.
Prepare the bread
Spread a thin layer of softened butter on the bread (classic touch).
If you want the authentic konbini look, trim off the crusts.
Assemble
Spread a generous layer of egg salad on two bread slices.
Top with the remaining bread.
Wrap tightly in plastic wrap and let rest 5–10 min so the filling sets.
Serve
Cut in half and enjoy — creamy, soft, balanced just right! 🍽️
