Shopping List:
4 strips bacon
1 medium diced sweet onion with a good pinch of salt
1 jalapeno pepper, finely chopped
1 tbsp. minced garlic
1 lb. ground chuck beef 80/20
1/8 cup Fiesta Brand Fancy Light Chili Powder
1 tbsp. ground cumin
1/2 tbsp. paprika
1/2 tbsp. brown sugar
14 ounces diced tomatoes
6 ounce can tomato paste
1/2 tsp. unsweetened cocoa
Small pinch cinnamon
10.5 ounce can beef broth
Shredded cheddar cheese and green onion for garnish.

Directions:
In a large cold pot or Dutch oven over medium heat, add the bacon and cook until crisp. Remove and set aside the bacon, but leave the bacon grease.
Add diced onion to the bacon grease with a pinch of salt and cook until soft and translucent, about 5-7 minutes.
Add the diced jalapeno and minced garlic to the onions and stir about 45 seconds until fragrant.
Add the ground beef to the onions and garlic, break up and brown, about 7-8 minutes, allowing it to sear well and leave it kind of chunky.
Add the diced tomatoes and tomato paste. Stir until well blended in.
Add all of the spices and cover with the beef broth. Bring to a simmer, reduce the heat to medium low and simmer for 1 hour, stirring every 15 minutes or so. Cook until you reach the consistency you like.
Add the bacon, stir and serve.
Garnish with shredded cheddar and green onion.
