Headlines Oct 6: HAPPY THANKSGIVING WEEKEND! Canadians to spend more on Thanksgiving dinner this year as food inflation hits record levels. Food has never been more expensive. Last year, the price of a kg of fresh turkey was about $6.59, or $42.84 for a 6.5kg bird, according to the Agri-Food Analytics Lab. This year the average cost is closer to $9 per kg, almost $20 more per bird.

Canadians in most time zones can “fall back” on Saturday, Nov. 4 this year before they head to bed, as the clocks roll back in the wee morning hours of Nov. 5 while most people are sleeping.

IMPORTANT! Defrost your turkey OVERNIGHT in the Fridge, NOT THE SINK.

-Preheat oven to 350°F (177°C).
-If stuffing the turkey, do so while the oven is preheating. Spoon stuffing lightly into turkey instead of packing firmly because stuffing expands while cooking. (Allow ½ cup (125 ml) of stuffing per pound (500 g) of turkey.)
-Place turkey breast-up on a rack in a shallow roasting pan.
-Roast uncovered, or loosely covered with foil. If you choose to baste your turkey, limit the number of times you open and close your oven (once per hour is sufficient).
-Turkey is cooked when the meat thermometer reads 170°F (77°C) for an unstuffed turkey, or 180°F (82°C) for a stuffed turkey and the juices run clear. Insert meat thermometer in the thickest part of the inner thigh, but not touching the bone.
-When roasting, any stuffing placed in the cavity of the bird should read and internal temperature of at least 165°F (74°C).
-Remove the turkey from the oven when cooking is completed and let stand 20 minutes to allow the juices to set.

Pumpkin Pie Cheesecake! THANKS LINDY!

Pumpkin Walnut/Pecan Cheesecake:

Ingredients
Crust
· 1 1/2 cups Graham wafer crumbs
· ¼ cups white sugar
· ¼ Cup Walnuts or pecans crushed
· ½ cup unsalted butter, melted
·
· FILLING
· 3 (8 ounce) packages cream cheese, softened
· ¾ cup firmly packed brown sugar
· ¾ cup white sugar
· 5 large eggs
· 1 (15 ounce) can pumpkin puree
· ¼ cup heavy cream (33% whipping cream)
· 2 teaspoons pumpkin pie spice
Walnut Topping:
· 1 cup firmly packed brown sugar
· 1 cup coarsely chopped walnuts / pecans
· 6 tablespoons unsalted butter, softened
· Whipping Cream for garnish


Preheat the oven to 325 degrees F (165 degrees C). Lightly butter a 9-inch spring form pan. Mix crust ingredients in a bowl until well combined. Press firmly into the bottom and up the sides of the prepared pan. Bake in a 350* oven for 5 minutes and cool.

-Beat cream cheese in a large bowl with an electric mixer until smooth. Add 3/4 cup white sugar and brown sugar gradually, until well mixed. Beat in eggs one at a time until mixture is light and fluffy. Add pumpkin puree, cream, and pumpkin pie spice and whipping cream blending on low speed until incorporated. Pour mixture on top of the chilled crust.

-Bake in the preheated 325* oven for 1 hour and 35 minutes.

-While the cheesecake is baking, mix brown sugar, walnuts, and butter for topping together in a small bowl until crumbly.

-Remove cheesecake from the oven and sprinkle with walnut topping. Return to the oven and bake for an additional 10 minutes.

-Remove from the oven and let cool completely. Refrigerate before serving for several hours, or overnight.

Whopper Ice Cream Pie
Ingredients: Oreo CookiesIceCreamWhoppersCaramel SauceChocolate Sauce
Directions:Crush a family pack of Oreo Cookies in a blender… (you may want to add a couples of drops of butter)… grab a handful of your mixture and squeeze, if it stays into a little ball.. its ready.
Press your mixture on your pie plate, and firmly press down to make your crust.Once your crust is made, stick it in the freezer.
In the meantime, scoop Ice Cream. Take your pie crust and place your ice cream on the Oreo pie crust. Be generous… i usually go about one to one and a half inches high 🙂. – – stick it in the freezer…
Break whoppers in half, place ontop your ice cream…
Drizzle Chocolate and Caramel Sauce ontop!
Voila! Put it back in the freezer… and serve when you are ready!!!

Carrot Casserole
INGREDIENTS

fresh carrots
condensed cream of celery soup
water
Stovetop stuffing mix
butter
onion
cheddar cheese
green onions (optional)

INSTRUCTIONS

Preheat oven to 325 degrees F and spray a small round roaster or casserole dish with non-stick cooking spray.

Peel and chop carrots into small pieces.

Cook in boiling water until a fork can easily go through them. Drain carrots.

Meanwhile, in a microwave safe bowl, cook 2 tablespoon of butter and onions in microwave for 2 minutes. *This is a quick way to make sauteed onions

In a small roaster or casserole dish, add soup, cooked carrots. water and stove top stuffing (dry mix) then mix in onion in butter.

Sprinkle shredded cheddar cheese over the carrot mixture.
Top with remaining (3 tbsp) of melted butter.
Bake for 20 minutes in preheated oven.

1 cup uncooked long-grain rice

1 (10.5 ounce) can condensed French onion soup

1 (10.5 ounce) can beef broth

1 (4 ounce) can sliced mushrooms, drained

¼ cup butter

Directions
Preheat the oven to 350 degrees F (175 degrees C).

Combine rice, condensed soup, beef broth, mushrooms, and butter in an 8-inch square casserole dish.

Cover and bake in the preheated oven for 60 minutes.
